Figtree Kitchen of Rollinsford, NH operates the café in the TYCO Visitors Center. Best known for its regular appearances at local Farmers Markets, Figtree describes itself as “a small batch artisan baker located on the New Hampshire Seacoast providing great tasting food that's prepared fresh and made from scratch with the highest quality ingredients.”

Delighting in descriptions and signage of scratch-made items ‘designed to make your mouth water,” Figtree offers sweet and savory tarts, breakfast wraps, the gluten-free “Confession Cake” and Figtree’s signature kouign amman, a pastry from Brittany, made with flaky croissant-like pastry gilded with caramelized sugar. As Figtree Kitchen has continued to evolve over the past four years, the opportunity at Strawbery Banke capitalizes on the company’s reputation and following in Portsmouth and the Seacoast. “You have to keep recreating yourself or you become yesterday’s news,” said Mike.
